Banana Chocolate Chip Muffins

There aren't many things more delicious than warm muffins, especially when they are warm, moist AND full of melted chocolate chips!!! My mom passed this recipe along to me, and after enjoying it so much growing up, I am now able to share it with my little ones. The best part is, they love them just as much as I did (and still do)!

Banana Chocolate Chip Muffins

1/4 Cup Sour Cream

1 t. Baking Soda

1/2 Cup butter (softened)

3/4 Cup Sugar

1 Egg

1 1/2 Cup All Purpose Flour

Salt

1 Cup Mashed Banana

1 Cup Semi-Sweet Chocolate Chips

1 t. Vanilla

Preheat oven to 350 degrees. Stir sour cream and baking soda together and set aside. Cream butter and sugar until light and fluffy; add egg, beaten well. Beat in sour cream mixture. Stir in remaining ingredients. Do not overmix. Spoon into greased muffin cups and bake approximately 18 minutes. Yield: 12 muffins
