Best Apple Cider Cupcakes

I am all about pumpkin everything as soon as Fall arrives, but I also enjoy a good apple dessert. This cupcake recipe is seriously so good! It will no doubt result in endless compliments and requests to make them again. This recipe is quickly becoming one of my go-to Fall staple recipes.

The best part is, it really didn't take too long to make them, and the ingredients (besides the apple cider) are all common baking ingredients that I keep on hand year round anyways. Quick and simple are two things that make a recipe really appeal to me. And after enjoying one of these delicious cupcakes (okay, okay... maybe I had more than one.... but once you try them you will understand!!) I decided I had to share this with the world. They are that good!

If you do not enjoy a good dose of sweetness, then this may not be the recipe for you. But... if you appreciate a good sweet treat packed with lots of flavor, I highly recommend you try these this Fall!

Apple Cider Cupcakes with Cinnamon Buttercream Frosting

Yields: Approx. 18 cupcakes

Ingredients Needed:

For the cupcakes -

2 eggs

1⅔ cup all purpose flour

1 cup apple cider

⅔ cup sugar

½ cup unsalted butter, softened

2 tsp. baking powder

1 tsp. ground cinnamon

½ tsp. salt

1 tsp. vanilla

For the frosting -

1 cup butter, softened

3 1/2 cups powdered sugar

½ cup light brown sugar

1 T. cinnamon

1 tsp. vanilla

2 T. milk

  1. Preheat oven to 350 degrees, and line muffin tin with cupcake liners.

  2. Cream together butter and sugar. Add the eggs and vanilla.

  3. Whisk together all of the dry ingredients in a separate bowl. Add the apple cider and the mixture of dry ingredients, into the butter/sugar/egg mixture.

  4. Fill cupcake liners ⅔ full and bake for 17-19 minutes. Bake until toothpick or fork inserted into center comes out clean. Let cool completely before frosting.

  5. To make the frosting, whip the butter, brown sugar, cinnamon and vanilla together with a mixer until light and fluffy.

  6. Gradually add powdered sugar.

  7. Add milk until you reach desired consistency.

  8. Frost cupcakes as desired.

  9. Garnish with a small apple slice, if desired. Enjoy!!
